Ingredients
- 2 tablespoons butter 
- 1 tablespoon olive oil 
- 1 pound crimini mushrooms, sliced 
- 4 ounces shiitake mushrooms, stems removed and sliced 
- 1 large onion, chopped 
- 1 leek, white part only, sliced 
- 4 garlic cloves, minced 
- 4 cups vegetable stock 
- 1 cup heavy cream (or cashew cream/coconut milk for vegan option) 
- Salt and black pepper, to taste 
- Fresh thyme leaves, for garnish 
- Optional: Drizzle of truffle oil for serving 
Instructions
- Caramelize the Mushrooms and Aromatics: Heat the butter and olive oil in a large pot over medium heat. Add the mushrooms, onions, and leeks. Stir occasionally, allowing them to slowly caramelize for about 15-20 minutes. Add the minced garlic during the last 5 minutes of cooking to avoid burning.
- Build the Soup Base: Pour in the vegetable stock and bring the mixture to a gentle simmer. Add salt and pepper to taste. If using heavy cream, stir it in at this stage.
- Blend Until Smooth: Carefully transfer the soup to a blender or food processor and blend until completely smooth. Return it to the pot and adjust the seasoning if necessary.
