Ingredients

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 1 pound crimini mushrooms, sliced

  • 4 ounces shiitake mushrooms, stems removed and sliced

  • 1 large onion, chopped

  • 1 leek, white part only, sliced

  • 4 garlic cloves, minced

  • 4 cups vegetable stock

  • 1 cup heavy cream (or cashew cream/coconut milk for vegan option)

  • Salt and black pepper, to taste

  • Fresh thyme leaves, for garnish

  • Optional: Drizzle of truffle oil for serving


Instructions

  1. Caramelize the Mushrooms and Aromatics: Heat the butter and olive oil in a large pot over medium heat. Add the mushrooms, onions, and leeks. Stir occasionally, allowing them to slowly caramelize for about 15-20 minutes. Add the minced garlic during the last 5 minutes of cooking to avoid burning.
