Ingredients
14 oz (400g) beef — ground or thinly sliced, choose a lean cut for tenderness and flavor
2 large sweet potatoes, peeled and cut into bite-sized cubes
3 tablespoons honey
4 tablespoons soy sauce — low-sodium works great
1 tablespoon sesame oil
2 cloves garlic, minced
1 ripe avocado, sliced
1/4 cup cottage cheese
1 tablespoon coconut oil
Black pepper, to taste
Instructions
Cook the Sweet Potatoes:
Bring a medium-sized pot of water to a boil over medium heat.
Once boiling, add the cubed sweet potatoes and cook for 10-12 minutes, or until they are tender when pierced with a fork.
Drain the sweet potatoes and set them aside.
Sauté the Sweet Potatoes:
In a large skillet, heat 1 tablespoon coconut oil over medium heat.
Add the boiled sweet potatoes to the skillet and sauté for 2 minutes, tossing occasionally.
Season with black pepper to taste, and stir to combine. Sauté for another 1 minute, allowing the potatoes to absorb the coconut oil and pepper.
Prepare the Beef:
While the sweet potatoes sauté, heat another large skillet over medium-high heat.
Add the beef (either ground or sliced) to the skillet. If using ground beef, cook until browned and broken apart. If using thinly sliced beef, stir-fry it for about 3-4 minutes, until cooked through.
Add the minced garlic to the skillet with the beef and sauté for 1-2 minutes, until fragrant.
Make the Honey Soy Sauce Glaze:
In a small bowl, combine the honey, soy sauce, and sesame oil. Stir until the honey is dissolved and the mixture is well blended.
Pour this glaze over the beef and garlic in the skillet. Stir to coat the beef evenly with the glaze. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.
Assemble the Bowl:
To assemble, divide the sautéed sweet potatoes evenly between 4 bowls.
Spoon the glazed beef mixture on top of the sweet potatoes in each bowl.
Add the Toppings:
Top each bowl with a few slices of ripe avocado.
Add a generous spoonful of cottage cheese to each bowl for a creamy contrast.
Optionally, garnish with sesame seeds or finely chopped green onions for extra flavor and crunch.
