  • 1 ciabatta loaf
  • 12 tbsp olive oil (extra virgin)
  • 5 garlic cloves (minced)
  • 1/2 cup sun-dried tomatoes (chopped up small)
  • 1/3 cup crumbled feta cheese (divided)
  • 1 tbsp fresh rosemary (chopped (or 1 tsp dried if that’s what you have))
  • 1 tbsp fresh parsley (chopped)
  • Salt and pepper (to taste)
  • Optional: 1 tbsp Kalamata olives

Instructions

  1. Preheat: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper to keep things easy to clean.
  2. Prepare the Garlic Oil: In a small bowl, mix together the olive oil and minced garlic. Brush this mixture over the cut sides of the bread.
  3. Add Toppings: Top the bread with chopped sun-dried tomatoes, rosemary, and half of the crumbled feta cheese. Season with salt and pepper.
  4. Bake: Place the bread, cut side up, on the baking sheet. Bake for 8-10 minutes, just until the edges are golden and the cheese begins to soften.
  5. Finish: Remove the bread from the oven and immediately sprinkle the remaining feta cheese over the top for a fresh, creamy finish. Garnish with fresh parsley for a bright, herbaceous kick. For even more Mediterranean flair, toss on some Kalamata olives if desired.
