- 1 ciabatta loaf
- 12 tbsp olive oil (extra virgin)
- 5 garlic cloves (minced)
- 1/2 cup sun-dried tomatoes (chopped up small)
- 1/3 cup crumbled feta cheese (divided)
- 1 tbsp fresh rosemary (chopped (or 1 tsp dried if that’s what you have))
- 1 tbsp fresh parsley (chopped)
- Salt and pepper (to taste)
- Optional: 1 tbsp Kalamata olives
Instructions
- Preheat: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper to keep things easy to clean.
- Prepare the Garlic Oil: In a small bowl, mix together the olive oil and minced garlic. Brush this mixture over the cut sides of the bread.
- Add Toppings: Top the bread with chopped sun-dried tomatoes, rosemary, and half of the crumbled feta cheese. Season with salt and pepper.
- Bake: Place the bread, cut side up, on the baking sheet. Bake for 8-10 minutes, just until the edges are golden and the cheese begins to soften.
- Finish: Remove the bread from the oven and immediately sprinkle the remaining feta cheese over the top for a fresh, creamy finish. Garnish with fresh parsley for a bright, herbaceous kick. For even more Mediterranean flair, toss on some Kalamata olives if desired.
- Serve: Slice it up and serve warm. This bread makes a perfect side to pasta, salad, or as a crowd-pleasing appetizer!
