Ingredients

  • 1 lb (450g) fresh mushrooms (cremini, button, or a mix of wild mushrooms)

  • 2 tablespoons olive oil

  • 2 medium shallots, finely chopped

  • 3 cloves garlic, minced

  • 1 bay leaf

  • 2 sprigs fresh rosemary, chopped (or 1 tsp dried rosemary)

  • 2 sprigs fresh thyme (or 1 tsp dried thyme)

  • 4 cups vegetable broth

  • 1 1/2 cups heavy cream

  • 1/2 cup Brie cheese, rind removed and cut into small pieces

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  1. Prepare Ingredients (5 mins): Clean and slice mushrooms, chop shallots and garlic.

  2. Sauté Shallots and Garlic (5-7 mins): Cook shallots and garlic in olive oil until softened.

  3. Cook Mushrooms (5-7 mins): Add mushrooms and cook until they release moisture and start to brown.

  4. Simmer with Broth and Herbs (10-15 mins): Add broth, rosemary, thyme, and bay leaf. Simmer until flavors meld.

  5. Blend and Add Cream (5 mins): Blend soup to desired consistency, then stir in cream and Brie cheese. Let simmer until smooth and creamy.

  6. Garnish and Serve (2 mins): Top with fresh parsley and serve hot.
