Ingredients
- 1 lb (450g) fresh mushrooms (cremini, button, or a mix of wild mushrooms) 
- 2 tablespoons olive oil 
- 2 medium shallots, finely chopped 
- 3 cloves garlic, minced 
- 1 bay leaf 
- 2 sprigs fresh rosemary, chopped (or 1 tsp dried rosemary) 
- 2 sprigs fresh thyme (or 1 tsp dried thyme) 
- 4 cups vegetable broth 
- 1 1/2 cups heavy cream 
- 1/2 cup Brie cheese, rind removed and cut into small pieces 
- Salt and pepper, to taste 
- Fresh parsley, chopped (for garnish) 
Instructions
- Prepare Ingredients (5 mins): Clean and slice mushrooms, chop shallots and garlic. 
- Sauté Shallots and Garlic (5-7 mins): Cook shallots and garlic in olive oil until softened. 
- Cook Mushrooms (5-7 mins): Add mushrooms and cook until they release moisture and start to brown. 
- Simmer with Broth and Herbs (10-15 mins): Add broth, rosemary, thyme, and bay leaf. Simmer until flavors meld. 
- Blend and Add Cream (5 mins): Blend soup to desired consistency, then stir in cream and Brie cheese. Let simmer until smooth and creamy. 
- Garnish and Serve (2 mins): Top with fresh parsley and serve hot.
